Bob’s Red Mill and Bake from Scratch magazine are excited to present the 2021 Better Baking Academy, which now includes virtual workshops for each monthly module! Brian Hart Hoffman, editor-in-chief of Bake from Scratch, will teach each one-hour class and share baking tips, tricks, and recipes that you will want to re-create at home for family and friends. Consider this series an accessible and express version of baking school delivered straight to your home.
For the first class of the series, we will tackle a classic French pastry to create a showstopping holiday dessert: Paris-Brest. Pronounced pah/ree-brest, this dessert is a ring of light and airy pastry called pâte à choux that is filled with delicately flavored cream. For our Paris-Brest recipe, the pastry gets dipped into homemade caramel and then topped with Candied Hazelnuts before the pastry is filled with a silky Praline Crème Mousseline—the perfect edible centerpiece for any table!
The major takeaway skill for this lesson is learning how to make pâte à choux, or choux pastry, which is an extremely versatile recipe that can be used to make a wide variety of desserts. In pastry school, choux pastry is one of the first techniques learned because it is utilized in so many different ways. At the end of the first Better Baking Academy class, you will have the foundation to conquer iconic desserts such as cream puffs, éclairs, French cruller doughnuts, as well as, the step-by-step instructions to create a head-turning Paris-Brest.
The December Paris-Brest module is only $10, and all money will be donated to No Kid Hungry, a national campaign to end childhood hunger in the United States. Millions of children in our nation live in “food insecure” homes, meaning that those households do not have enough food for every family member to lead a healthy life. This problem has further increased in the past year with school closures due to the global pandemic. By participating in events like this December baking class, you will be supporting the No Kid Hungry project and helping children receive the healthy meals that they need.
